Nestled in Centennial, Colorado on the streets of South Glenn Mall lies a love story that stretches over 600 miles. This is the story of Cubs BBQ. A friend of mine told me about this place and when people talk, I have to see and taste it for myself. I was fortunate enough to actually meet the owner and family behind the operation and get the grand tour. Greg and his son Michael McCubbin are the proud owners of Cubs BBQ. Supported by their family, they operate one of the most addictive authentic BBQ joints in Colorado. Did I mention they are from Kansas City! When the family decided to uproot and relocate to the Rocky Mountains, they brought their Chiefs banners, smoker, and Kansas City BBQ Secret Recipes. I will let you in on one little secret though, they smoke using ozark hickory, which gives their meats a very strong finish on taste that can’t be found anywhere else in the city.
Aside from being a family owned and operated, they like to take their show on the road across theRocky Mountain region. With one of the largest food ruck trailers, their catering business puts all hands on deck year round serving up bbq everywhere from school functions, company events, and even competitions. If you’re bold enough to try to do bbq in Colorado, you have some stiff competition. A family that bbqs together, is undefeated.
